The Best Granola

Granola can be made a million different ways. Which is one of the reasons it’s so much fun! In our home we sprinkle it on our cereal, as an added crunch on salad, in yogurt and for snacking right out of the jar. Because I love to share, I present to you our favorite granola recipe!  

I make a HUGE batch in a large blue enamel roasting pan several times a year. It freezes well and smells incredible when I’m making it. Every year it is one of our favorite goodies to give during the Christmas season. I’m often asked for the recipe and have shared my version a multitude of  times. Like fine wine, we make it a little different from year to year depending on what sounds good and what is on sale (love a bargain) when I go shopping, but the basics remain the same. 

Feel free to double or triple the ingredients. I recommend letting it cool on a flat surface and storing in an airtight container. I keep mine in the freezer or refrigerator for long term goodness.

The Best Granola 

10 cup rolled oats – quick or regular

1 cup skim milk powder 

1 cup wheat germ

1 cup bran flakes

1 cup nuts/seeds/almonds/walnuts

1/2 cup raisins/chopped dates

1/2 cup unsweetened flake coconut

2 eggs beaten

1 cup vegetable oil

1 cup honey

1 1/2 tsp vanilla

Combine all dry ingredients in a large roasting pan Beat eggs until foamy, then add oil, honey and vanilla beating again until well combined. Pour over dry ingredients. Stir until well mixed. Bake at 225 for one hour, stirring every 15 minutes. Makes approximately three quarts. 

Give generously to all you love and make often.
