Lemon Scones For The Win

Summer is a season for refreshing treats of all kinds!

Ice cream, fresh fruits, and roadside stands filled with vegetables and cut flowers are some of my favorite parts of summer.

The smells, tastes, textures, and vibrant colors are delicious in every way.

I don’t spend a lot of time baking inside during the summer, but recently I discovered a fabulous recipe for lemon scones and just had to share it with you.

So my friend put on your apron and join me as we dive into a recipe that will leave you wanting more. Let’s raise the bar on scones and indulge a little.

You didn’t know you needed this, but trust me, you do!

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon fresh lemon juice (for glaze)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Add the chilled and cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.
  4. Add the lemon zest, lemon juice, buttermilk, and vanilla extract to the bowl. Stir until the dough starts to come together. Be careful not to overmix.
  5. Transfer the dough onto a lightly floured surface and gently knead it a few times until it forms a smooth ball.
  6. Roll out the dough to about 1-inch thickness. Using a round cookie cutter or a glass, cut out individual scones and place them on the prepared baking sheet.
  7. Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown on top.
  8. While the scones are cooling, prepare the lemon glaze. In a small mixing bowl, whisk together the powdered sugar and lemon juice until smooth.
  9. Once the scones have cooled slightly, drizzle the lemon glaze over the top of each scone.

Serve the lemon scones warm or at room temperature and enjoy!
